Today, I am celebrating the first of the harvest. We have a huge sage plant - you can only eat so much fresh sage! Last weekend we found some herb jelly recipes and decided to try a couple.
This is the sage jelly. It's a pretty mellow color, I think. I've never thought that the juice of the leaves would be anything but green. It turned out to be yellow. Tastes pretty good, too.
And if that's not yellow enough, you can squint at the bottom of the first jar - there's a bit of yellow label peeking around.

ReplyDeleteDid you have to do that thing with muslin to get the juice clear? I remember making apple jelly when my kids were small, and being terrified that they'd topple over my shaky, hastily constructed "tower" to strain the juice.
Enjoy your jelly, I'd say it would be lovely with lamb or pork- if you're not vegetarian.
I bet it would be yummy with chicken. A match made in heaven. I wonder if you could use the jelly to glaze the chicken? Why not? Mmmm. Now I'm hungry.

Those jars of jelly are a lovely muted colour. What a great idea to make sage jelly. Where did you find the recipe?
